Gastronomy in the heart of traditions

Oil and olives often have a place in Nice gastronomy. The people of Nice are so proud of their olive trees that they made it a symbol, as proof of this, you can see the majestic olive tree in front of the Masséna high school, that has been a Peace monument since 1931The people of Nice are so proud of their olive trees that they made it a symbol, as proof of this, you can see the majestic olive tree in front of the Masséna high school, that has been a Peace monument since 1931.

Olive paste, “tapenades”, delicately spread on small grilled bread slices, will be served as an aperitif or as Meridional starters. A touch of Olive oil on the toasts will magnify the taste of these products.

The "Cailletié" olive trees grown in the Côte d’Azur yield crops of an extreme refinement. Here is a reminder of the principles that the Romans gave to our ancestors to ensure perfect quality :

"Those who plough the soil around the olive tree expect fruit.
Those who feed it, get it.
And those who prune it will force the harvest".

Our Extra Virgin olive oil is the result of a first cold pressing of olives harvested at the right time and processed in the hours following harvest, in order to obtain the purest of aromas from the fruit.
Of course, the work of the mill operator is very important for it is he who extracts all the juice without altering the identity or the character of the olives.

The mortar is the kitchen utensil used in Provence for recipes such as Aïoli, Pesto, Olive paste, tapenades… these pastes will complement your aperitifs or cooked meals….
We recommend two reference cook books ("La cuisine du Comté de Nice", "La bonne cuisine du Comté de Nice" written by Jacques Médecin, former mayor of Nice).
